Low carb Pistachio and cardamom loaf

Ingredients:

  1. 1/2 Cup of sour cream
  2. 4 large eggs
  3. 1/2 tsp vanilla
  4. 3 cups of almond flour
  5. 1/2 cup of sugar substitute I used swerve powder
  6. 1/2 cup of roughly grounded Pistachios
  7. 2 tsp of baking powder
  8. pinch of of salt
  9. 1/4 tsp of freshly ground cardamom

Directions:

Preheat the oven to 350, in a bowl whisk all wet ingredients
On top of the same bowl add the flour, salt, grounded cardamom, baking powder then add the pistachios and incorporate with a spatula.
Bake in an already sprayed loaf pan and I added parchment paper so I could easily remove it.
Bake for 50 mins or until an inserted toothpick comes out clean, let cook for a bit then take out of the pan and serve when cooled completely.

Enjoy with a hot cup of coffee or with mint tea.
